This is a really good sticky cake with a tangy and fresh taste of lemon. Great to have with your coffee or as a dessert! Bake and surprise your friends and colleagues at work with a lovely lemon cake. It is delicious served with a dollop of whipped cream!
The recipe below provides around 12 slices of a really tangy and fresh cake that just melts in your mouth.
3 cups powdered sugar
2 tsp vanilla
2 ½ cups flour
How to make
- Preheat the oven to 175 degrees. Wash the lemon and rub dry. Grate the zest finely and squeeze out 1-2 tablespoons of juice. Melt the butter in a saucepan. Remove it from the heat and add all the ingredients. Stir everything together until smooth.
- Pour the batter into a greased and floured baking tray, 23-24 cm in diameter, with removable edge. Coat the edges with grated coconut or breadcrumbs to prevent it sticking.
- Bake the cake in the oven for 18-25 minutes, depending on how gooey you want it. Let the cake cool in the pan. Dust it with icing sugar before serving and for an extra touch great a little lemon peel and sprinkle finely on top. Serve the cake with a dollop of whipped cream.
