We have discovered that apricots are already mature in some parts of the island. Take the opportunity to enjoy this wonderful refreshing fruit. Eat it fresh from the tree or why not make marmalade or a good apricot wine? Apricot Marmalade recipe:
400 g fresh apricots
150 g fresh peaches
½ lime juice / juice
4 tablespoons white wine
400 g jam sugar
1 teaspoon ground cardamom
Deseed the fruit and cut it into pieces. Boil the fruit until they start to break apart.
Add the wine, lime juice and jam sugar. Let boil for a further 2 minutes and add the ground cardamom.
Pour into clean glass jars and place in the fridge.
